2. Tatar Pies
Ingredients:
✓ 100 g butter
✓ 2 cups flour

Cooking:
1. We take 100 g of butter and grind it into crumbs with two glasses of flour, a pinch of salt and soda on the tip of a knife.
2. Then add 1 glass of kefir or sour milk and 2 eggs.
3. Knead the dough by adding flour. The dough should be softer than dumplings. We leave him to lie down, "rest."
4. We make the filling. We take any meat, raw potatoes and onions and cut everything into cubes, like a vinaigrette. Salt, pepper, mix.
6. Put the filling in the middle and pinch the edges, like khinkali, only leave a hole in the middle.
7. Put the pies on a baking sheet covered with baking paper and send to the oven, heated to 200 C.
8. After 20 minutes, we look into the oven. There was liquid inside the pies. Now put a piece of butter in each pie. And send it back to the oven.
9. After another 20 minutes, we again look into the oven. The pies have begun to brown, and the broth inside has already boiled away. Lubricate each pie with an egg, and add a spoonful of broth inside it.
10. We send it to the oven for another 15 minutes. Everything, the pies are ready.
11. Put them in a container and cover with a towel or lid. The pies should soften a little.
Serve with soup or just eat.
3. QUICK PIE WITH MEAT
Ingredients:
✓ 2 cups of sour cream (kefir, fermented baked milk, curdled milk)

Cooking:

Mix 0.5 cups of vegetable oil, salt, flour. Add diluted yeast.
Immediately knead the dough. It should not be tight and stick to your hands.
Make balls out of the dough immediately. The dough should not rise, it will rise when frying.
We grease our hands with vegetable oil and make pies. We make the pie flat.
Fry in plenty of hot oil, seam side down.
6. QUICK APPLE PIE
Ingredients:
✓ Cottage cheese (mashed, soft) - 500 g
✓ Egg white - 2 pcs
✓ Vegetable oil (odorless) - 250 ml
✓ Sugar - 250 g
✓ Baking powder - 2 pack.
✓ Flour (how much it takes) - 800 g
✓ Apple (medium) - 6 pcs
✓ Cinnamon - 1/2 tsp
Auxiliary:
✓ Egg yolk (for lubrication) - 2 pcs
Cooking:
We need 2 bags of baking powder for the dough, because the total weight will be more than 1 kg.
Add 2 proteins to soft or mashed cottage cheese (the yolks will be used later for lubrication), odorless vegetable oil.
Then, sugar, baking powder, beat everything with a mixer until smooth for a couple of minutes.
Gradually add flour (first you can mix with a mixer, then with a spoon, at the end with your hands).
Knead a soft elastic dough (how much flour it will take, but the dough will be very soft and elastic).
Filling. Peel and grate apples on a coarse grater, add ground cinnamon.
Divide the dough optionally into 2 parts, roll into thick bundles, cut into portions.
Flatten each round of dough thinly on a board sprinkled with flour and put the grated apple filling on it.
Pinch the edges of the pies, flatten. Place on a baking sheet lined with baking paper, seam side down and brush with egg yolk.
Bake at 180 * C for about 30-35 minutes, until golden brown.
These pies received from my relatives and friends the highest rating of everything that I have ever tried to cook.
7. DOUGH FOR FRIED PIES
Ingredients:
For the yeast mash:
✓ 50 ml of water
✓ 1 teaspoon (5 g) dry yeast
✓ 1 teaspoon of sugar
For test:
✓ 250 ml milk/water/kefir
✓ 2 yolks (optional)
✓ 2 teaspoons of sugar
✓ 1/2 teaspoon salt
✓ 500 g flour (it may take you a little more or less, because flour is different everywhere)
✓ 2 tbsp vegetable oil
Cooking:
Pour dry yeast into a cup, 1 teaspoon of sugar, pour 50 ml of warm water and stir. Put in a warm place to rise.
If the yeast is good, then after 15 minutes they should come to life and rise with a foam cap. If the “caps” did not work out, then you should change the yeast!
Pour warm milk into a deep container. Add: sugar, salt, yolks, vegetable oil, pour in the risen yeast and mix everything well.
Sift 2/3 of the flour from the total mass and knead (slowly adding the remaining flour) a very soft, sticky dough. Do not hammer the dough with flour, the pies will turn out tough, rubbery.
It is better in the future, when sculpting pies, to use more flour for powdering.
Knead the dough for 10 - 15 minutes (this time is necessary for the flour gluten to work), carefully, until it lags behind your hands.
Place the kneaded dough in a bowl greased with vegetable oil, tighten the top with cling film and place in a warm place to rise.
I put the bowl of dough in the fridge (overnight). After about 1.5 - 2 hours, make the first stretch, then cover again and leave to rise. After that, you can work with the test.

Milk 100 ml
Yeast dry fast acting 5 g
Salt 0.5 tsp
Granulated sugar 1 tsp
Sunflower oil refined 20 ml
Boiled chicken 300 g
Wheat flour 2 tbsp.

To prepare such pies, you need to take for the dough: butter, dry yeast, milk, sugar, salt, sunflower oil and flour. Any filling can be done. I have boiled meat with fried onions.
First we prepare the filling. Finely chop the onion.
Put the chopped onion in a hot frying pan with sunflower oil.
While the onion is frying, we begin to prepare the dough for the pies. Melt the butter in a water bath or microwave
Add warm milk to butter.
Pour dry yeast, sugar and salt into butter with milk.
Let stand for 10 minutes until the yeast foams.
In the meantime, we continue to prepare the filling. Grind boiled meat (I have chicken) in a blender or pass through a meat grinder.
The bow is ready.
We combine the meat with fried onions, salt and pepper to taste. Mix well.
Yeast "revived".
Sift flour to remove impurities and enrich with oxygen. One glass contains 130 grams of flour.
Gradually combine flour with butter, milk, yeast, sugar and salt.
Knead an elastic, soft dough. It does not stick to hands due to fat.
We divide the dough into three parts.
Roll out each piece into a rectangle.
On the edge of the wide side lay out the minced meat, as in the photo.
We turn the roll.
With the edge of the palm, “cut” the roll into pieces about 3-4 centimeters wide. This is done simply and quickly: swing the roll with the palm of your hand, as if we were sawing.
These are the little pies.
Put the pies in a baking dish. I didn't grease them with anything.
Bake in the oven, preheated to 175-180 degrees for 30-40 minutes. From the indicated amount of ingredients, I got 17 pieces of pies. Once you take the pies out of the oven, cover with a towel and let cool. Then transfer to a saucepan and cover with a lid. They will become soft, and tomorrow even softer.
